PRIVILEGE AND EXCEPTION OF A GASTRONOMIC FRENCH RESTAURANT
After the opening of his restaurant, Le 39V Paris, Michelin star chef Frédéric Vardon is inaugurating the 39V Hong Kong, located in the West Kowloon district on the 101st floor of the International Trade Center Tower. Vardon is a chef who takes care of his team. Two of his team members helped open the restaurant on avenue Georges V seven years before. When he offered to move them to Hong Kong to open the new restaurant, they jumped at the opportunity.
The 39V HONG KONG reflects the values and culinary identity of Paris. The version of today's French cuisine by Vardon is elegant, seductive and just. In a contemporary setting, the chef proposes a contemporary reinterpretation of traditional cuisine and composes a neo-classical and sometimes roguish cuisine. Vardon gives absolute priority to taste. It is a tribute to the fundamentals in cuisine drawn from the heart of the French culinary heritage that the chef interprets throughout the seasons. The 39V highlights the artisan producers who keep and pass on the French know-how, respectful of the environment and the people.
It is genuine and honest cuisine with short and simple names. Many dishes can be ordered as large or small plates. The 39V menu is designed to satisfy all the different tastes of its customers.Some of the signature dishes include John Dory with artichokes // Egg cooked low temperature, mushrooms ‘royale’ and delicate broth, bread’s finger // Kristal Gold Caviar ‘Maison Kaviari’ // Blue lobster raviolis printed with herbs, southern vegetables, delicate bisque broth // Oven-grilled macaroni with wild mushrooms // Beef tenderloin from France with pepper and mashed potatoes.

We are always on the lookout for small producers and big names of tomorrow, and our wine list skillfully combines the wines of renowned houses with those of the new generation of winegrowers who carry on the tradition of their elders. Rich and diverse, the wine list offers more than a hundred references with a wide selection of wines and champagnes by the glass and carafe. And for the pleasure of connoisseurs, the restaurant has a menu with some famous grands crus.
DESIGN | A PARISIAN REVERIE
The 39V HONG KONG pays tribute to the Parisian interior design with the contribution of noble materials that are the symbol of elegance and refinement: wooden tables, hand-woven carpet, velvet banquettes and leather armchairs. Part of the ceiling is decorated with illuminated stacked geometric scales. In the dining room, the transparent wine cellar gives a very singular style to the restaurant with a contrast of materials and colors. Much like the Parisian address, a private room offers an incredible backdrop. The unique and unobstructed view of the Victoria Harbor will surely be a perfect backdrop for the dining experience.
Our tableware is the reflection of a contemporary, deconstructed and sober style to entertain with taste and elegance. In order to bring a modern touch, the chef has called on famous brands such as the Coquet house or EBH, Explorer glasses from the wine workshop and the famous golden triangle black silverware.
